February is all about the sweet stuff. Because of Valentine’s Day, candy is everywhere! It can often be hard to resist the urge indulge, especially when you’re constantly being tempted. It’s especially difficult when you’re facing the mid-afternoon slump at work—when you’re craving a sweet pick-me-up, it’s easy to reach for a cookie or a piece of candy. While we highly encourage treating yourself to some high-quality treats every now and again (or even every day!), it’s also good to have healthier options on hand.
These fruit and nut bars make a yummy, good-for-you snack that will help you power through your day while also satisfying your sweet tooth. They’re packed with protein, omega-3s, and fiber, and are light on sugar, so you can feel great about what you’re eating. They’re easy to make, and easy to carry, so you can slip one into your lunch bag or purse every day to tide you over when hunger hits. And the best part? Ingredients:
1/3 cup whole-wheat flour (or use oat flour to make it gluten-free)
1/8 teaspoon baking soda
1/3 cup packed brown sugar
3 cups dried fruit (such as our California Dates, Pears, and Turkish Apricots, although you could use any assortment that you’d like)
1 ½ cups of nuts (such as our Jumbo Almonds, Jumbo Cashews, and California Colossal Pistachios – or even some of our Mashuga Nuts)
1 egg
(You could also add in a handful of Trail Mix for an extra kick of flavor).
Directions:
1. Preheat oven to 325 degrees. Line an 8-by-8 inch baking pan with parchment paper, or coat with nonstick spray.
2. Coarsely chop fruit and nuts until pieces are about the same size.
3. Whisk flour, baking soda, and baking powder together in a large bowl until combined. Add brown sugar, fruit, and nuts, and mix until the fruit and nuts are coated in the flour mixture.
4. In a separate bowl, beat the egg with the vanilla until it’s frothy and thick.
5. Stir egg into flour mixture until evenly mixed.
6. Spread mixture into the pan, using a spatula to smooth out the top.
7. Bake for 35-40 minutes, or until golden brown.
